@jbotte: We're not aware of any specific JDK incompatibilities with LibreOffice 7.2, so our only advice would be to try a different JDK if the one you're using isn't working. They might know better in

@baggiponte: There's no reason to be struggling with LibreOffice 7.0 — the Java version incompatibility was fixed in LO 7.1, which was released months ago.

I can't promise it'll help, but I'd consider moving to up-to-date LibreOffice via their own ppa (see e.g. https://ubuntuhandbook.org/index.php/2020/08/libreoffice-7-0-install-ppa-ubuntu-20-04-18-04/).
