Zotero creates these hyperlinks in Google Docs because there is no better way to create citations in Google Docs. The links don't lead anywhere and the feature you are looking for does not exist with

First thing to check is whether you have Google Docs Integration V2 enabled in Zotero Connector (browser extension) Preferences under Advanced. If you do, disable it and refresh the Google Docs page.
