This isn't currently documented, but you can change this by going to the Config Editor in the Advanced tab of the Zotero settings, entering extensions.zotero.ui.tagsAfterTitle, and creating a new Boolean pref set to true. Then restart Zotero.

We'll likely be adding a separate option to invert images in Zotero 8, at least for some themes. Are you trying to recreate the previous white-on-black dark mode exactly or just the images?
