Google Docs doesn't support endnotes. You can use a bibliography style or write with footnotes and then transfer the document to Word or LibreOffice and convert the footnotes into endnotes.

You want to select the style for any given document in the "Document Preferences" for Zotero in Google Docs, not anywhere in Zotero itself.
