What I don't get is the why? There is some 15 or so name variables. Many of them are barely used. Just use one not at all used in your style and use that.

This has nothing to do with the topic per se. You'd need to modify your citation style. That's where that is dealt with. You shouldn't be deleting/moving metadata around in your Zotero library to achieve a certain output.

Well, then whoever is telling you to use APA7 actually doesn't want you to use APA7... You'd need to modify the style.

If you're supposed to use APA7, then that's done correctly for you. APA7 removed the "Retrieve [date]". If you however still need/want that, you can switch to APA6 which you can install from here: https://www.zotero.org/styles?q=APA 6th
