This should be fixed in the next revision of client, but in the meantime you can fix this by going into Preferences -> Advanced -> Feeds and changing the defaults to be at least 1 for each field.

Is your Zotero data directory stored in a Dropbox (or similar syncing) directory? That would lead to Zotero database corruption and in turn a problem you describe.

Although note that with windows you can add the "-p [profile_name]" to the shortcut in properties under, if I recall correctly, "Target". You should be able to create two separate shortcuts for ease of use.
