You should update to the latest version of LibreOffice 6.0.6 Still or 6.1.2 Fresh. They had a bug in versions prior to 6.0 where it would not detect versions of Java 10 and higher.

The fields are grey to indicate that they have been inserted with automatic citation updates disabled and are not in their final form. They will go white once you refresh the document.

@AnnaTlamkova if you copied in the citations from another document, edit any citation in the new document (you just need to have the citation dialog appear and press Enter, no need to change anything), and then try inserting the bibliography.
