Restart your computer. Start Zotero before you start Word.

You are running a Beta version of Word. You should revert to the stable version and see if you still see the issue there. If you do, follow Troubleshooting Errors in Word Processor Documents.

That's just a misunderstanding. Editing in Word does exactly the same as the editor in the old dialogue and has for at least a decade: Edits are kept and future updating of that citation is disabled.
