Yes, that can be programmed into a given citation style or we can recommend a different style. Which style are you using/do you need to use?

You're not stating which plugin you used, but you'd need to contact the plugin developer on their repository. There are a few different alternatives you could try though: https://citationstyler.com/en/knowledge/ai-plugins-for-zotero/

This depends on the citation style. You can either switch to a different style or edit the current one.

I'm not sure I'm following. They clearly request for the DOI to be included, hence the change. Many styles have added this to their guidelines in recent years.

Footnotes/endnotes are actually just handled by Word and their format can be changed within Word itself. Easy to find via Google.
