Most likely, this is a plugin issue. You should investigate which plugin is causing that and report the issue to its developers.

Does the search work if you try it with any other PDF viewer? This is likely an issue specific to the PDF file—possibly due to invalid character mapping.

Most likely, this is a scanned document with poor OCR that has various issues. Other PDF viewers should encounter the same problems when displaying this PDF file.

Currently, there is no easy way to do that. However, future versions of Zotero will allow to select all text using Cmd/Ctrl-A and copy it with Cmd/Ctrl-C.
