You would want to set it to "it-IT" not "en-US,IT", but I don't think Zotero Standalone ships with non-English spellchecker dictionaries, so you might just have to disable the spell checking for the time being as per Mike's instructions above.

Did you enter this information manually? Was it generated by some other software? The Timestamp field is not "standard" Bib(La)TeX What is the Timestamp supposed to be? Date accessed? Date added? Date modified? (the last two cannot be set)

What's your Zotero Safari extension version? The 4.0.27.7 is the Standalone version.

The plugin previously worked only with Firefox, but it was fixed recently to work with Standalone as wellExcellent. I wasn't actually aware it didn't work previously.

Download the XPI file, in standalone go to tools > add-ons > gear menu (top right) > add from file (or something of the sort) and select the XPI file
