By default, automatic backups occur no more frequently than every 24 hours. You can tell when the last backup happened by looking at the Modified timestamp for the zotero.sqlite.bak file (how you do that depends on the OS you are running).

Use a saved search to filter all PDFs. http://www.zotero.org/support/searching#advanced_search Select "Attacment File Type" "is" "PDF" and save that as a Saved Search. Then select the search and hit Ctrl+A to select all PDFs.
