You should make sure it fixes itself in your larger document too by refreshing. For what's causing it, as I described above, the only known reason would be a cited item URL that contains a quote " symbol.

@Metaljisawa Can you confirm that you see this bug in the document that you have shared with us if you got into the Zotero menu and press Refresh? You may get a dialog about a modified citation, you choose "No" in it.

Collaborative citing the way you are doing it is supported and generally does not cause any issues. As for your problem, you should remove all instances of the existing bibliography and reinsert it, and see if the problem goes away.

Generally you shouldn't be editing the bibliography manually. Describe in detail what it is that you are trying to achieve.

Could you submit a Report ID? What's the full version number of Word that you are running? Can you reproduce this in a new document? How big is your current document?

There isn't a general issue in Zotero that makes it impossible to cite Chinese literature, although for some users it doesn't work when Word/Windows use the Chinese language.

Does this work well in a new document? Do you have other google-docs related extensions installed in your browser? Did you try disabling them? Could you produce a Debug ID from Zotero for an insertion that fails?
