We're still working on a fix, although it had to be delayed due to other urgent issues cropping up with the Zotero 7 release. We hope to have it available in the following weeks, but can't provide precise timelines.

The debug log you have submitted shows a near-identical opening speed. Do you also see this in a new document? Could you provide a screen recording for the difference between Zotero 6 and 7?

This is not going to change in the near future. The Zotero plugin in Word needs to communicate to Zotero, and the only way to do it at the moment on Sonoma and later is to run an AppleScript command (which in turn performs a HTTP request to Zotero).

Restart Zotero and your browser, then submit a Debug ID for an attempt to insert a citation. The citation dialog (the red box) should definitely not disappear automatically unless you press Escape or Enter.

What is the version of JRE that is selected in LibreOffice Options -> Advanced dialog? What error are you getting when trying to manually install the extension?

Zotero 7 should not be any slower that Zotero 6 on macOS. Perhaps your document has grown in size since. Once you perform an initial insertion of a citation with Zotero 7, the rest should be fast if you have automatic citation updates disabled.
