You need to create a parent item first. Or save from the parent webpage, and edit the metadata from there.

Are you talking about the website or the app? For the latter, see How do I change Zotero preferences?. For the former, there are no settings (except for UI density and color scheme).

If you are using APA 7 (numeric, superscript), the references are listed by their order of appearance in the text. Are you seeing something different?
