I am facing a similar issue. I suspect a problem with the hyphens. If I type in the DOI manually, Zotero finds and adds the entry. But copy/pasting it from Springer fails. So my guess is there are some similar looking symbols that are not correctly converted to standard ascii.
That's odd. It seemed consistent with manual typing and accessing the DOI from the command line but now I do in fact get occasional 504's from the URL. So I agree it has nothing to do with Zotero. Thank you.

HTTP GET https://doi.org/10.1007%2Fs00170-019-04916-3 failed with status code 504
That was just a 504 Gateway Timeout error from doi.org. It's working fine for me at the moment. There's no problem with the hyphens.
