It may help to keep part of the Zotero window visible on screen while the process is running. When the Zotero window is completely hidden behind other windows, macOS may slow it down.

Assuming you've been working without a bibliography, you should do some tests runs of generating a bibliography leading up to your due date just to make sure there are no surprises. You should plan to leave your computer running for a while — possibly even overnight — with both Zotero and Word partially visible on screen.

I tried, the difference is night and day on a small document (10 pages), so much faster when Zotero is partially visible. More precisely, once Zotero use 0% CPU (MacOS put Zotero in "sleep") inserting and refreshing citation become unresponsive (~10 seconds before seeing the inserting UI after clicking the "Add/Edit citation" button in MS Word).
