Editing Note Title

(Mac User here).

I'm trying to rename the title given to a note and can't seem to figure this out. Does the note title automatically take the title of the book?

Notes don't really have titles. The heading that you see above your note text in Zotero's right pane is the title of the parent item. You can give the note to a new parent item, but you cannot edit that heading. Notes are listed in the item list (as you have seen) by the first line. So you can 'title' them there by adding an appropriate first line.
