Chicago Manual of Style 18th ed. - How to Include Place of Publication
A lot of journals in my field request CMoS *with* place of publication, which was the format for earlier versions of CMoS but not the current one. Can anyone tell me how I can get Zotero to include place of publication in the note?

Once you know the exact version of Chicago (say, 16th), you can add that style through the Settings section, found under the Edit tab at the top left of the Zotero app.
Click "Cite" and there you can search for and select the version of Chicago you need from the list in Style Manager.
Depending on which authoring program you are using, you may need to select Chicago 16th, notes and bib, at the time of adding the note into your document.
There are also versions of the 18th edition with place of publication still available -- they're labelled as "classic variants" e.g.
