Is there any benefit for licensing the styles other than encouraging attribution? I guess that the styles authored by (former) Zotero employees could easily be converted to a certain license, if desired.

You can achieve what you want by using the chapter item type instead of the book type. Indicate the relevant pages in the info-tab of the item (right-hand column in your Zotero library) and you should be good to go.
