I don't have the 9 chip color icon that is shown in the help text...maybe that was deprecated? There's just a different icon in Zotero 7. (That menu doesn't have anything to do with colored tags — it was just meant as a generic "tags" icon.)

No, you wouldn't want to do that. They're not config files. You have extension ZIP files, various binary files containing your sync credentials, a constantly changing prefs.js file, and various other automatically updated files.
