Ok so I found this notification in my junk email, sorry for the delay! Gave the new profile a go, this time I just got the Zotero loading bar, with no grey window auto-opening.

Sorry I forgot to say I had also disabled my other extensions. I don't have a Firefox profile set up, is that an issue? I should also say that there are multiple people that the google doc is shared with, do they all need Zotero for it to work?

Hey, thanks for chiming in! I've just restarted everything, still doing the same thing - loads a grey screen in a new window of firefox and a full zotero progress bar. Also my Zotero just updated to v5.0.92 fyi
