Yes-- the and tags will show in the interface in Zotero 2.0.9 and 2.1, but they will render properly when used in citations in Zotero 2.1b2 and later versions of Zotero.

And if you can't edit the metadata at right, try disabling Personas and other Firefox add-ons-- something is interfering.

Just create a new item using the "Create new item" menu, the + icon, drag a PDF file onto it, and edit the metadata accordingly.

The BibTeX CSL style is not recommended because it's simply not as robust as the export translator. There is little in the way of example code out there for working with the Atom data-- but it is fairly self-explanatory (if limited).
