Use "Manuscript" which does have type field. It's also formatted in the new Chicago CSL to cite any unpublished document properly. Why do you need "Document" if you have "Manuscript"?

When you are choosing an item type, the provenance of the video/audio matters more than format (streaming or file)--you would cite PBS streaming audio as a radio broadcast for example, or a YouTube video as a video recording.
