You do not want to use "document". Document entries cannot be cited in the word processor. IMO, a Newspaper Article would probably fit well.

Sorry, the main problem with escaping were < signs for me. Apostrophes and quotes should be fine, as you say. Notes are formatted as HTML, so use either our to preserve newlines.
