Sorry, the main problem with escaping were < signs for me. Apostrophes and quotes should be fine, as you say. Notes are formatted as HTML, so use either our to preserve newlines.

This is not currently possible, but it has been requested several times before. I don't think that this will be added to Zotero any time soon though. There are several more pressing features that the developers are currently working on.
