Unless you can reproduce this with a mouse it's likely that you are accidentally clicking/tapping the touchpad when you drop the items which is what's causing the collection to switch.

We've never seen something like this but this seems like a Google Auth bug. Could you try revoking Zotero access to your account at https://myaccount.google.com/permissions then restart your browser and try using Zotero in Google Docs again?
