What you are seeing is correct Turabian style. Are you sure you don't want it? The only way to change it is to modify or change the citation style you are using.

You should generally store titles in Zotero in sentence case -- by default, the biblatex export will assume this and protect capitals accordingly. For how to avoid this, you didn't answer the second question: are you using the BetterBiBTeX add-on?
