Yes, it's pointless to the first question. I can't tell you what you should do, but if you can't use a desktop _and_ don't want to or can't store your data on the Zotero servers, I don't see how you can use Zotero

You've never been able to add/change metadata directly on a PDF, only on the parent item a PDF is attached to. Right-click --> Create parent item to attach that PDF to an empty parent, which you can then edit.
