We'd want links to items for which you can currently reproduce this. I understand they'll be gated, but I have pretty broad ProQuest access here.

Have you opened this in a different PDF reader and see if it works there? Zotero's PDF reader generally supports annotating & extracting Greek (and any other unicode) text. This might be an encoding or even OCR issue.
