How are you exporting though? If you're using the built-in Overleaf integration, the export settings don't do anything -- that uses the API which always outputs UTF-8

you can use spaces in affixes so write " Interview #6" or so. (FWIW, in no style or journal I'm familiar with are primary interviews cited together with the literature, so this is also just an unusual way to cite).
