The MLA style is set to format it as just (Churchland). Can you confirm that the editors are entered in Zotero as “Editor” and not as “Author”. If they are, do you see the problem in a new empty document?

Your google doc is not connected to Zotero. You can go back to the word version and import it again using the conversion directions.

That is something that I could see someone writing a Zotero plugin to do. I wouldn’t expect it to be added to Zotero itself unless any of these systems became much more widely adopted.

This changed in APA 7th edition. APA now uses et al even for the first citation. If you still need the 6th edition version of the style, it is available from https://zotero.org/styles/apa-6th-edition

This is controlled by what citation style you set in the document. After you have scanned the document, in LibreOffice, click Document Preferences in the Zotero toolbar and choose the style you want (e.g., Chicago Author Date).
