How I agree how useful it would be to have an undo button in notes, (not PDF) having just deleted accidentally my night's work

If you're just talking about text in a note, Ctrl/Cmd-Z already works for that, if you haven't switched away from the note.
If that's no longer an option, you may be able to restore from one of your
automatic backups
.

I find that Cmd-Z does not work in the note editor (the side panel) either from the main library or from the pdf reader. Is this a reversion, or have I messed up my settings somehow?

cmd-Z not working for me either using zotero 7.0.6 on mac (installed using brew)

Do you mean that when you type something and press Cmd-Z, it doesn’t undo the text?
Please test with all third-party plugins disabled.
