"Add Note" feature in Ms. Word (Zotero Beta)

The "Add Note" feature is awesome.
But, it would be better if we could choose the notes that we would insert.

Currently, when using "add note" all notes go into the document

Not sure what you mean by that. Add Note lets you choose the note to insert.

If by "note" you mean "annotation", it just depends on which annotations you've added to the note. There's a function to add all of a PDF's annotations to a note but there's no requirement to do it that way:

The point of this workflow is to let you add one or more annotations to a Zotero note, start writing around those annotations and building the text of your document, and then insert the note into your document with active citations.

When we add notes, we also get everything https://simpan.ugm.ac.id/s/vW5ToEFAbxEY8Fz

For example, only the first quote.

Can we just choose the notes we need?

See above. What you're calling "notes" are individual annotations.
