apa 7 in text citation for interview in book

I am citing a quotation from an interview in a book. It is: Gandini, L. (2012). Parent participation in the governance of the schools: An interview with Sergio Spaggiari. In C. Edwards, L. Gandini, & G. Forman (Eds.), The hundred languages of children: The Reggio Emilia experience in transformation (3rd ed., pp. 117-133). Praeger.

I want to write an intext citation for something that Sergio Spaggiari said. Do I write the quote with the chapter author (Gandini) as the source or do I use Spaggiari's name?

i.e. Thinking of societal change, Sergio Spaggiari notes that “In the past 30 years in Italy, there has been a drop in the birth rate, which has brought a change in the structure of young families” (Gandini, 2012, p. 120).

    You can refer to Spaggiari in text. For example,
