can anyone point me to a citation style (preferably with examples) which uses the "rights" field? I have seen somethings showing up on wikipedia with open access symbols in them, but would like to see some other examples...

There isn't. "Rights" currently isn't mapped to CSL, see https://aurimasv.github.io/z2csl/typeMap.xml
"license" is included in the planned CSL 1.0.2 variables and would map to "Rights".
