I wonder whether there is anyway to replace
[u.a.]
inside the "publisher-place"
with
u.a.
from within Zotero?

I'm not sure exactly what you are trying to. Could you provide a more detailed explanation of what the issue is?

The Place field often includes [u.a] (German for "and others"), but the style requires the brackets to be stripped. Ie:
Cambridge u.a.
not: Cambridge [u.a.]
I can strip them manually, but wondered whether there was an easier solution using something like Find and Replace.

IF you program in Python, you can use Pyztero with the Zotero JavaScript API to batch edit fields. But there is not easier way to do that currently. Batch editing is planned for Zotero 5.2.

Learning Python would be overkill, but thanks!
(I am really amazed at how quickly you reply each time I ask a question. No commercial app I ever used had support of this kind! Thanks so much!)
