how to add metadata in the PDF file, so that metadata can be read by Zotero?

using special software? or simply by writing the complete metadata information on the first page? Title, author, journal name, issue, edition, page, doi, keywords ...

Any documentation about it?

Zotero doesn't read metadata from PDFs. It queries the internet for it. You can make it more likely that it is successful by including the DOI (or ISBN for books) on the first page, but for Zotero, what'd be more important is to include good metadata on the page you're serving the PDF _from_ https://www.zotero.org/support/dev/exposing_metadata
