Quick word count: Highlight text > cmd + shift + F9 > check count > cmd + z
Accurate word count: Select ‘Word Count’ style > highlight text > cmd + shift + F9 > check count > cmd + z > revert style

It basically excludes citations completely from the word count. I recommend saving your work beforehand just in case - it doesn't remove anything but better safe than sorry.
