I'd just put "Smith apud" into the prefix field and then create the citation you're actually using with Zotero.

I tried what you said, but doing it, "Smith" won't be in the Bibliography...

If you haven't consulted it, it probably shouldn't be in the bibliography. Many style guides would consider that misleading.
But if you really do want to include it, adding it via "edit bibliography" is the way to go.
