I can access to the Zotero menu in my Google doc but nothing happens when I choose "Add citation" (or rarely, most of the time nothing happens). What's the problem ?

Most likely there already is a citation dialog open in the background (look through open Zotero windows) that doesn't automatically focus for you. Also you should make sure that when a citation dialog opens you close it either by confirming (Enter) or dismissing (Esc)
