Format "date" fields as ISO 8601

How can I format the date fields as ISO 8601?

I've read various posts suggesting to set the language to English UK, but there seems to be not an option to set the language anymore.

My Windows regional settings are properly set to ISO 8601 for short dates

You can set the interface language right at the top of the General tab of the Zotero preferences, but none of the English languages are YYYY-MM-DD. All the non-US English ones are DD-MM-YYYY.
Zotero doesn't use your system date settings, so those are irrelevant.
