What options do we have with the tags in zotero - a beginner question

Can we add new tags?
Are tags and keywords being fetched generally?
I am very interested in these things. Can anyone please shed a light here.

Yes, you can add any tag you want to any record in your library.
Many import translators (see https://www.zotero.org/support/translators for more information about these scripts) will import keywords as tags, others might not: you will observe different behaviors depending on the source platform.
