Privacy Policy Zotero: what is included in library data?

I have found some information on the privacy policy and have to say I am glad that it is all written down without using any complicated legal jargon. However, one thing I am still unsure about.
I am working together with our privacy coordinator to evaluate whether we can/should get a Zotero license at our organisation.
She asked about the ability to link documents to references, and whether someone in theory could for instance include their resume on accident... the answer is yes, in theory this can happen. However, I am unsure if this is then data Zotero has access to. All I can find is that they have access to "all library data" in order to be able to sync your library.
Does this include the added/linked documents to references? And does this mean Zotero has access to just the metadata or the full document?
