Forcing different default profiles for different versions of Zotero

Because I need to use RTF/ODF Scan (https://zotero-odf-scan.github.io/zotero-odf-scan/) as part of my workflow, I am trying to set it up so I can run both Zotero 7 and Zotero 6 on the same computer. The intention is to only use Zotero 6 when I need to use that extension.
I am running into an issue where I am unable to ensure that each version uses a distinct user profile when opened, unless I use the run command to launch the program so as to be able to select the profile manually. I have created a separate profile, with a separate data directory, specifically for Zotero 6 by following the instructions in the knowledge base on multiple profiles. Yet it seems as though the profile picker window dictates the settings for both versions, as if I set a profile to be the default when opening Zotero 7, it will also be the default next time I open Zotero 6 (and vice versa).
Is there a way to avoid this without having to manually select the profile each time I open either version?

chrislittleI should say the reason for wanting to use two distinct profiles is because I am wary of any problems I might introduce by switching between two different versions on the same computer, but perhaps that is unnecessary - so any advice there would be appreciated too.
