Hidden Formatting Options in Notes

I have happened upon various hidden options in Notes, as I typed things--like an asterisk and space turning into a bullet, three hyphens becoming a rule, tab and shift-tab controlling indents. Is there a place where these formatting tricks are described? I suspect there are some I haven't discovered yet.

This comment has an incomplete list of shortcuts and input rules, but the latter is mostly just accepting Markdown syntax rules to trigger rich-text formatting.

(Something like Tab/Shift-Tab is just a standard note-editor convention.)
