Ok, this is because of the template I use for the highlights. If I use the default template, there is no problem. Word is able to work with my template, but not LibreOffice.

Zotero only has (limited) support for citing in tables in LibreOffice.

You can install the Zotero plugin into LibreOffice manually. See https://www.zotero.org/support/word_processor_plugin_manual_installation

I installed the official LibreOffice flatpak, because the apt-repo-version is borked for a long time now (in debian unstable).

Have you tried restarting your machine? If that doesn't help, does downgrading to the stable version of LibreOffice help?
