If you set the two-letter language code of the item in the Language field to the (non-English) language of the item (so es for Spanish, de for German), the English "title-case" capitalization will be disabled for that item.

If you have documents cited using EndNote, you'll need to reset each of the citations individually using Zotero. The EndNote field codes cannot be read automatically by Zotero.
