You can stick any of those dashes in any of Zotero's fields. You can copy paste them in or you can tweak your keyboard settings to create them out of key combinations.

If you use a web mail client you may be able to use the "Create New Item From Current Page" button, or highlight text and chose "Create Zotero Note and Item From Selection". Otherwise copy paste is probably your best bet.

Take a look at the Making your site Zotero ready page for a quick rundown of different options. The best way to get a sense of how Zotero will import BibTeX or RIS records is to just export some example items form Zotero in each format.

I haven't heard of anyone getting any sort of longer ban.

Do you know what MARC field the contents is stored in? If you take a look at the MARC record it should be a three digit number. If the same field is consistently used for this we can open a ticket to get it shoved into the extra field.

If you really want to run completely independent libraries you can do so through multiple Firefox profiles. In the future there will also be more refined permissions set ups for sharing individual collections and subcollections.

When looking for a proper item type the question is not really about what it is called, but what fields you need. If document has all the fields you need it should be fine. You might also take a look at report.
