That's a Frontiers issue -- if you look at Export Citation at the bottom right, all formats have the reverse author order. Same in the site metaheader (where Zotero gets its data). Please report to them.

Add/edit bibliography will add the bibliography for all cited items in a current document at the current cursor location. Put your cursor at the end of the document, then click the button.

I do think the BibLaTeX label is a bit odd, but you'd have to take that up with them. FWIW, I'm guessing this is due to a false friend: BibLaTeX's lead developer is German, and the German "Jurisdiktion" encompasses both the English "jurisdiction" …

You can't add or delete fields, no. You can add content for non-existing fields using the Extra field and those will get picked up by citation styles: https://www.zotero.org/support/kb/item_types_and_fields#citing_fields_from_extra
