Yeah, Chicago has specifically advised against using access dates since the 17th edition, so if you want access dates for items that have a publication date (it will include them for items that don't) you'll want to use a different style.

Which citation style(s) are you using? This is determined by the citation styles, it's not a Zotero setting. Both APA and Chicago Manual did away with access date requirements (so they aren't in the style), but many journal styles have kept them.
